HÜHNERLEBER  BURSCHETTA

Bruschetta with Chicken Liver

2 shallots or 1 small onion
2 tbsp. olive oil
3 cloves of garlic
200 g chicken liver
50 ml white wine (dry)
1 tsp. tomato purée
1 tbsp. capers
3 tbsp. parsley
salt, pepper
 

  Chop finely garlic, shallots and parsley. Prepare liver. Braise lightly garlic and shallots in olive oil. Add chicken liver and fry all some minutes. Add wine, tomato purée, capers and parsley. Simmer some minutes more. Allow to cool down.
Mash finely and season to taste with salt and pepper.
