Halibut with Mushrooms

500 g potatoes
250 g mushrooms
1 onion
750 halibut fillets
1 tbsp. oil
salt, pepper, lemon juice
5 tbsp. beef stock (cube) or white wine
parsley

 

 

 Peel potatoes, cut into medium sized pieces and parboil in salted water for 10 minutes.
Clean mushrooms and cut leafy, dice the onion finely. Heat oil in a casserole dish or glass saucepan. Sauté onion, add mushrooms and sauté a few minutes. Season with salt and pepper.
Preheat oven to 200 ° C.
Season halibut fillets with salt, pepper and lemon juice. Add potatoes to the mushrooms and place the fish on top. Sprinkle with soup. Close casserole (aluminum foil) and bake in the oven for 35 minutes.
Before serving, sprinkle chopped parsley over the fillets.
