LACHS  auf  TOMATEN  BASILIKUM  RAGOUT  

Salmon on Tomato Basil Ragout

4 Salmon filets (á 150 g, skinless)
3 tbsp. olive oil
salt, pepper

Tomato Ragout
2-3 cloves of garlic (finely cuted)
1 tbsp. olive oil
300 g cherry tomatoes (halved)
3 tbsp. ketchup
80 g basil (fresh)
salt, pepper, sugar

 

 

Preheat oven to 180°C. Sprinkle salmon filets with oil and cook them in oven about 10 minutes. Season with salt.
Fry garlic short time, add tomatoes amd let all simmer some minutes. Stir in ketchup and bring to the boil. Sesaon to taste with salt, pepper and sugar.
Chop basil and fold in.

 

       Side dish:  parmesan gnocchi
