Salmon with Basil Butter

4 cutlets from salmon
4 tbsp. basil leaves
1 tbsp. chives (chopped)
125 butter
salt, pepper, cayenne pepper
1 tbsp. lemon juice
oil

 

 

Basil butter: Cut basil leaves into fine stripes. Mix well chives, butter and basil. Spice with salt, cayenne and lemon juice. Cover aluminium foil with butter, rolling up and chill it.
Salmon: spice with salt and pepper. Heat oil and fry salmon cutlets over medium heat about 5 minutes every side or grill them. Serve with basil butter.

 

      Side Dish:salad, baguette
