SPANISCHER  FISCHTOPF

Spanish Fish Pot

1 onion
4 cloves of garlic
1/2 red and 1/2 green pepper
1 leek (white and pale green parts)
400 g tomatoes
500 g codfish fillets
2 tbsp. olive oil
1 l vegetable soup
1/2 tsp. paprika powder
2 bayleafs
200 g shrimps
1 tbsp. parsley (chopped)

 

 

 Cut onion and garlic finely, leek into small slices. Dice peppers into small cubes. Peel tomatoes, remove seeds und dice them too. Cut codfish fillets into bite-size pieces. Sautee onion and garlic until golden brown. Add peppers and leek and roast them for 4 minutes, stirring regularly. Stir in tomatoes, paprika powder. Add vegetable soup and bayleafs. Simmer soup covered for 10 minutes. Fold in fish fillets and let them sit for 5 minutes. Add shrimps and let them sit for 3 minutes. Sprinkle soup with parsely before serving.
