Dice the meat and mix with salt, egg white, cornstarch
and 1 tbsp. oil. Remove seeds of the peppers and dice.
Heat the remaining oil in a wok. Fry garlic and ginger 30 seconds with
stirring. Add meat and sauté about 5 minutes.
Add pepper, chilli, soy sauce, sherry and vinegar and simmer 5 minutes
more until the chicken is cooked. |
