Chicken with Pumpkin

4 chicken fillets
8 bay leaves
Marinade
3 cloves of garlic (pressed)
5 tbsp. soy sauce
1 t´bsp. tomato paste
1 tsp. ginger (finely chopped)
Vegetables
1 green chili pepper
4 tomatoes (peeled)
400 g Hokkaido
1 green pepper
1 onion (chopped)
4 cloves of garlic (chopped)
2 tbsp. oil
1 tsp. ginger (finely chopped)

 

Mix well all the ingredients for the marinade with 1 pinch of chili. Cover the fillets on both sides with the marinade and marinate 1 hour in refrigerator.
Cut Chili into rings and chop tomatoes finely. Dice peppers and pumpkin. Mix all ingredients and season with salt, pepper and nutmeg.
Preheat oven to 200 ° C.
2 piece of aluminum foil (30x40cm) place over each other. In the middle place the vegetables, upon meat and bay leaves. Put foil over it and fold along the sides. Tighten together at the ends.
Place packet on a baking sheet and cook for about 25 minutes in the oven (middle shelf).
