BROKKOLI  LAIBCHEN

Broccoli Loaf

2 eggs
500 g broccoli
breadcrumbs
2 onions
150 g bacon
grated cheese (to taste)
2 tbsp. parsley
salt, pepper Oil

 

 

Cook the broccoli in salted water until tender, strain, remove the stalk and mash with a fork or a hand blender. Mash with a fork or puree with a hand blender. Finely chop the bacon, onions and parsley and
and mix with broccoli, eggs, breadcrumbs and cheese. Stir well, season with salt and pepper and leave to rest for 30 minutes.
Shape into small loaves, roll in breadcrumbs and fry in hot oil until crispy.
