CROSTINI  mit  RUCOLA 

Crostini with Rocket Salad

10 slices ciabata
1 glove of garlic
5 tbsp. olive oil
1 tbsp. balsamic vinegar
3 spring onions
10 black olives (stoned)
1 red bell pepper
50 g rocket salad
100 g parmesan (rasped)

 

 

Wash spring onion and remove the dark green pieces. Cut finely onions and olives. Cut bell pepper in thin and short stripes. Chop rocket salad coarsely and mix well with spring onion, bell pepper and olives. Season to taste with salt and pepper.
Grill bread on both sides in oven golden brown.
Rub one side of every bread with garlic and sprinkle with balsamic vinegar. Cover with vegetable, sprinkle with olive oil and garnish with parmesan.
