MARINIERTE  GURKEN  mit  GARNELEN  und  PAPRIKA 

Marinated Cucumber with Shrimps and Peppers

2 red peppers
1 cucumber
100 g shallots
4 tbsp. olive oil
12 shrimps (shells removed)
1 clove of garlic
3 tbsp. parsley (chopped)
2 tbsp. vinegar
3 tbsp. olive oil
salt and pepper

 

  Peel red peppers, remove stalk and seeds. Cut peppers into strips.
Peel cucumber, cut into 2 cm cubes, boil in salted water for about 5 seconds then strain, refresh and drain well.
Peel the shallots and fry them over medium heat in 2 tbsp. olive oil about 10 minutes, then place them with the oil on a plate. Heat the remaining oil in the frying pan, fry shrimps with crushed garlic 5 minutes, stir in shallots, remove from heat and sesaon with salt.
Mix well vinegar, 2 tbsp. water, oil and salt. Mix vegetables, shrimps and parsley with the marinade and steep for about 5 minutes.
