MACCERONI  alla  CALABRESE   

Macaroni alla Calabrese

100 g bacon
1 kg tomatoes
3 tbsp. parsley (chopped)
1 punch basil (chopped)
100 g parmesan (grated)
400 g macaroni
3 tbsp. oil
1 pepperoni
1 onion
3 cloves of garlic
salt, pepper

 

 

Peel tomatoes, remove seeds and cut into small cubes. Dice ham, onion and garlic.
Heat oil in a pan and stew onion and pepperoni. Add garlic, ham and roast all for about 5 minutes. Add tomatoes and simmer all for 50 minutes. Boil macaroni until they have a slight bit. Remove pepperoni and season to taste with basil, parsley, salt, pepper and parmesan.
