Rinse corn and drain. Chop tomatoes. Dice peppers. Cut
the bacon and meat into cubes. In a saucepan heat 3 tbsp. of oil and
sauté
onions, garlic, bacon and meat. Deglaze with a little balsamic vinegar
and add tomatoes, diced peppers and corn. Simmer for 50 minutes.
Peel potatoes, dice and add to the meat with the parsley. Douse with the
soup and simmer until the meat and potatoes are tender. Stir in tomato
paste and season with salt and pepper. |
