Cut sirloin into stripes, 1/2 cm in thickness. Mix them
with 2 tbsp. soja sauce, 2 tbsp. sherry, 2 tsp. cornflour and marinade
all about for 1 hour in the fridge.
For the sauce mix well 3 tbsp. sherry, 3 tbsp. soja sauce, 1 tbsp.
sesame oil, 1 tbsp. finely chopped ginger and 1 tsp. corn flour.
Cut chili pepper finely, red and green peppers into stripes, leeks into
rings and zucchini into cubes of 1 cm thickness. Wash and drain sprouts.
Boil noodles in salted water until firm to the bite, strain and let them
drain.
Heat 2 tbsp. oil in a pan (wok). Sear sirloin, stir constantly. Remove
and keep warm beef. Wipe the pan and heat 2 tbsp. oil. Fry chili pepper
and pepper cubes for 2 minutes, stir constantly. Add leeks and fry 2
minutes more, stir constantly. Add zucchini and sprouts for 1 minute
more. Spice with salt. Fold in beef and noodles and fry all until beef
and noodles are hot. Stir in the sauce and bring it to the boil. Season
to taste with salt. |
