BOHNEN  RUCOLA SALAT

Rocket Salad with Beans

400 g canned cannellini beans (cooked)
600 g potatoes (cooked the day before)
1 red onion
4 tbsp. vinegar
125 ml beef stock (cube)
1 tsp. mustard
6 tbsp. olive oil
100 g rocket salad
200 g bacon (sliced)
salt, pepper

 

 

Rinse and strain beans. Peel potatoes and cut into slices. Pell onion, divide lengthswise and cut into fine stripes. Add onion and beans to the potatoes.
Mix the vinaigrette in a bowl: first vinegar, beef stock, mustard, salt, pepper then the oil. Mix vegetables with the vinaigrette. Add rocket salad and season to taste with salt and pepper. Serve with sliced bacon and baguette.
