Halve cucumber lengthwise and cut into 1cm slices. Boil
them in salted water for 2 minutes, strain and refresh with cold water.
Melt 2 tbsp. butter, add to the cucumber slices and season to taste with
lemon juice, dill, salt and pepper.
Cut red pepper into small cubes and fry them in 2 tbsp. butter. Douse
with white wine and boil until tender. Mix well and season to taste with
salt and pepper.
Mix lamb´s lettuce, rocket salad and cucumber and serve with sauce and
smoked salmon. |
