Curry with Pork and Pumpkin

1 kg neck of pork or Filet
20g ginger
2 cloves of garlic
4 tbsp. oil
1 tsp. tomato paste
1 tbsp. sugar
1 tsp. garam masala and curry powder
4 tbsp. soy sauce
500 ml vegetable soup
1 small cinnamon stick
2 star anise
200 g red onions
600 g pumpkin (Hokkaido)
salt, pepper

 

 

Cut pork in 3 cm pieces. Peel the ginger and garlic and chop finely. Season meat with salt and pepper. Sear meat in a pot on both sides, remove and reduce the heat. Sauté ginger and garlic, add the tomato paste and sugar. Can be easily caramelize, sprinkle with curry and garam masala, deglaze with soy sauce and douse with the soup. Add the meat, cinnamon and anise, bring to the boil, cover and cook in the oven at 180 ° C. Neck of pork about 1 1/2 hours, fillet 50 minutes.
Halve onions and cut into strips, pumpkin into 2cm cubes. 30 minutes before end of cooking add to the meat.
