Fillet of Pork with Bean Puree

Ingredients for 2 people

300 g fillet of pork
4 slices prosciutto
150 ml vegetable soup
Bean Puree
250 g of white beans (canned)
1 onion
3 cloves of garlic
1 lemon
salt, pepper, sage

 

 

Preheat the oven to 70 ° C. Rinse beans in a colander, and let them drain . Peel onion and garlic, dice finely and sauté in 1 tbsp. oil. Add beans, some lemon juice and
dried or fresh sage. Warm up, puree, season with salt and pepper and refgine with 2 tbsp. oil.
Cut fillets into 4 pieces and wrap each with 1 slice of ham. Fry them for 3-5 minutes on each side and keep warm in the oven.
Deglaze the frying residue with soup, simmer 1 minute and stir in 1 tbsp. cold butter. Do not simmer.
