Pork Tenderloin with Leek

600 g pork
Marinade
3 garlic cloves
4 tbsp. soy sauce
3 tbsp. rice wine (or dry Sherry)
1 tbsp. honey
Also
4 tbsp. sesame oil
500 g leeks or spring onions
1/2 bunch parsley (chopped)
salt, pepper, cumin

   

 

Cut pork tenderloin into 1 cm thick slices and then into strips.
Wash leeks and cut into 3cm pieces.
For the marinade, peel and chop finely the garlic cloves. Mix it with soy sauce, sherry and honey in a bowl to make a sauce.
Put the pork tenderloin strips into the marinade, cover and refrigerate at least 1 hour.
Heat oil in wok and fry the meat without marinade 3 minutes. Add the vegetables and the marinade and stir-frying two minutes, Season with salt, pepper and a little cumin.
Garnish with parsley and serve.
