Apple Dessert with Quark Yoghurt Cream

800 g sour apples
juice of 1 lemon
juice of 2 oranges
3 tbsp. sugar
1 cinnamon stick
2 tbsp. walnuts (chopped)
4 dates (cut into strips)
250 g quark
100 g yogurt
2 tsp. honey
1 / 4 tsp. cinnamon
zest of 1 / 2 lemon (grated)
 

  Peel apples and cut into pieces. Cook them slightly with lemon and orange juice, lemon peel, sugar and cinnamon stick for about 10 minutes. Remove cinnamon stick. Puree and chill apples.
Stir quark, yoghurt, honey, cinnamon and lemon zest until smooth. Serve applesauce in jars, place quark-yoghurt cream upon and cover with walnuts and dates.
