ABACATE  a  MONDA  FUNCHAL  

(stuffed avocados)

 4 eggs (hard boiled)
2 cans of tuna fish (a'150 g net weight)
2 red onions
2 tomatoes
4 avocados
3 tbsp. lemon juice
3 cloves of garlic
4 tbsp. olive oil
salt, pepper

 

 

Drain the tuna and teasing with a fork. Peel onions and chop finely. Halve tomatoes and cut into thin slices. Halve avocados, remove stones and the avocado flesh carefully from the skins. Chop flesh coarsely. Place avocado flesh with tomatos, tuna and onions in a bowl. Stir immediately with lemon juice. Peel eggs and cut into slices. Press garlic to the salad ingredients. Add olive oil, season with salt and pepper and mix carefully. Place salad in the avocado skins.
