LINZER  GRIESSKNÖDEL

Semolina Dumplings

250 ml milk
1 tbsp. butter
120 g semolina
2 eggs
2 rolls
120 g smoked ham
2 tbsp. chives or parsley (chopped fine)
salt

 

 

Bring milk, butter and 1 tsp. salt to a boil. Stir in the semolina and roast briefly. Cool down.
Remove the rind and cut rolls into small cubes. Then fry cubes in a little butter. Put bread cubes and eggs in the semolina mixture, add parsley or chives and season with salt to taste. Allow to rest.
Cut smoked ham into small cubes, fry them and add to the dumplings mixture.
Form dumplings with wet hands and drop them into boiling salted water. Turn back the heat and simmer for about 15 minutes.

 

     Side dish: in the summer salad, sauerkraut in the winter
