Scrambled Eggs with Pumpkin Seed Oil

4 eggs
2 slices of bread
4 tbsp. pumpkin seed oil
1 tbsp. oil
salt, pepper
1 punch chives
 

  Beat eggs in a bowl. Toast bread in a pan on both sides and cover with pumkin seed oil. Heat oil in a pan, add eggs and stirring constantly for 5 minutes, until the eggs have a light and creamy texture. Spice with salt and pepper. Put bread on warmed plates and cover with scrambled eggs. Sprinkle with chopped chives and some pumpkin seed oil.
