LEBERKÄSE  HOLSTEIN

Meatloaf Holstein

1 kg potatoes
2 red onions
4 tbsp. oil
4 slices of meatloaf
4 eggs
1/2 bunch of chives
4 anchovy fillets
salt, pepper

 

 

Boil potatoes, drain and let cool. Then peel and cut them into pieces. Peel the onions, halve and cut them into rings. Heat 3 tbsp. oil in a pan, add the potatoes and fry them while turning for about 10 minutes. Towards the end add the onion rings and season. In another pan heat 1 tbsp. oil and fry the meatloaf while turning about 5 minutes, remove and keep warm. In the frying residue fry the eggs and seasoning.
Cut chives into rolls.
Serve meatloaf, baked potatoes, fried eggs and each 1 anchovy fillet. Garnish with chives.
