LEBERKÄS  SPIESSE

 Leberkäse skewers

400 g broccoli
20 g of butter
20 g flour
200 ml beef stock
4 red onions
125 g double cream cheese
600 g Leberkäse (beef and pork loaf)
salt, pepper, oil
 

  Cut Leberkäse into 2x2cm cubes. Peel onion and cut into quarters. Stuck three Leberkäse cubes and onion quarters on wooden skewers alternately. Season with pepper.
Wash broccoli and divide into florets. Blanch broccoli in boiling salted water for about 5 minutes, drain and rinse with cold water. Reeserve 200 ml of the cooking water. Heat buttter in a saucepan and fry the flour for 2-3 minutes. Deglaze with the cooking water and soup and simmer for 5 minutes while stirring. Stir in cream cheese, season with salt and pepper. Add broccoli and keep warm.
In a large skillet, heat a little oil and fry the skewers on both sides for about 5 minutes.
