Minestrone with Rice

1 large onion
2 cloves of garlic
150 g white cabbage
2 zucchini
1 potato
2 carrots
1 parsley root
3 stalks celery
2 small. leeks
2 tomatoes
100 g peas (frozen)
100 g kidney beans (canned)
100 g bacon
1.5 liters vegetable soup
125 g long grain rice
1 bayleaf, basil, thyme, rosemary
salt, pepper, oil

 

 

Peel onion and garlic and chop finely. Wash all the vegetables and cut into bite-sized pieces.
Drain kidney beans. Dice bacon and fry in a little oil. Add diced onion and garlic
and allow to be glassy. Stir in all the vegetables except the tomatoes and sauté 5 minutes, then add the tomatoes. Douse with soup, add herbs and rice and simmer semi covered 20 minutes.
Season to taste with salt and pepper, garnish with chopped parsley.
