Zucchini Soup

4 spring onions
1 kg zucchini
700 ml beef stock (cube)
5 cloves of garlic
1 tsp. lovage (dried)
salt, pepper, nutmeg

 

 

Wash and peel zucchini, remove seeds and dice them.
Chop onions and braise lightly in oil. Add zucchini, douse with soup and bring to the boil. Chop garlic finely and put them into the pot. Let all simmer about 20 minutes, then mash with a immersion blender.
Season to taste with salt, pepper, nutmeg and lovage. Maybe refine with beef stock and a dash of pumpkin seed oil.
