Cut pumpkin into quarters, remove core and cut flesh
into thin wedges.
Peel the potatoes, larger cut in half lengthwise. Preheat oven to 180 °
C.
Grate the Parmesan finely. Mix well the cream and half of the parmesan.
Season well with salt, pepper and thyme.
Mix pumpkin and potatoes with the oil on a baking sheet. Pour cream over
it, sprinkle with the remaining Parmesan and bake for 40-45 minutes.
Add tomatoes 20 minutes before end of cooking. |
