Pumpkin from the Baking Sheet

1 Hokkaido pumpkin (1 kg)
50p g kl. potatoes
60 g parmesan
400 ml whipping cream
4 tbsp. olive oil
12 cherry tomatoes
salt, pepper, thyme

 

 

Cut pumpkin into quarters, remove core and cut flesh into thin wedges.
Peel the potatoes, larger cut in half lengthwise. Preheat oven to 180 ° C.
Grate the Parmesan finely. Mix well the cream and half of the parmesan. Season well with salt, pepper and thyme.
Mix pumpkin and potatoes with the oil on a baking sheet. Pour cream over it, sprinkle with the remaining Parmesan and bake for 40-45 minutes.
Add tomatoes 20 minutes before end of cooking.
