CURRY  -  KÜRBIS  

Curry Pumpkin

700 squash (butternut, hokkaido, ...)
2 onions
2 cloves of garlic (finely chopped)
2 tbsp. oil
200 ml vegtable soup
2 - 3 tsp. curry powder
125 ml creme fraiche
salt, pepper

 

 

Pell squash, remove seeds und cut into 1,5 cm cubes. Chop onions and fry them until translucent. Add squash cubes, douse with soup, spice with garlic, salt, pepper and curry. Stir in creme fraiche und stew all until squash beginning to soften. Season to taste.

Serve curry pumkin to rice or roast chicken.
