Potatoe Pan with Feta

750 g potatoes
1 bunch spring onions
2 courgettes
salt, pepper, oil
200 g feta cheese
chives, thyme (dried)

 

 

Peel and cut potatoes into small cubes. Fry them over low heat covered about 15 minutes.
Cut onions into rings, quarter courgettes lengthwise and cut them into slices. Add both to the potatoes, season with salt, pepper and some thyme and roast all over high heat about 5 minutes. Sprinkle with feta and chopped parsley.
