KOHLRABI  CARPACCIO II

Carpaccio from Turnip Cabbage II

4 small turnip cabbages
3 tbsp. horse radish (grated)
1 red onion
2 tomatoes
2 cloves of garlic
8 radishes
3 tbsp. vinegar
2 tbsp. balsamic vinegar
6 tbsp. oil

 

 

Peel and dice onions finely. Peel tomatoes, remove seeds and dice them. Cut chives and garlic finely. Cut radishes into thin slices.
Mix well onions, chives, vinegar and oil. Fold in horse radish and season to taste with salt and pepper.
Peel turnip cabbage and cut them into thin slices. Arrange them on plates, spread radishes upon and sprinkle with vinaigrette and balsamic vinegar.
