ZUCCHINI  LACHS  BROT

Zucchini Salmon Bread

 

Ingredients for 2 people

6 slices of ciabatta bread
7 tbsp. olive oil
200 g smoked salmon
2 eggs
30 g Parmesan cheese (grated)
1/2 small zucchini
1/2 small onion
2 cloves of garlic
salt, pepper, rosemary  

 

 

Fry bread in 4 tablespoons of oil on both sides brown and place on a plate.
Sesan eggs with salt and pepper and whisk well. Stir in Parmesan. Grate zucchini coarsely. Chop onion and garlic finely. Sauté zucchini, onion and garlic in the remaining oil and stir in some rosemary. Pour in eggs and let thicken, stir frequently. Spread on the bread and garnish with salmon.
