Halve the onion lengthways and cut into thin half rings,
finely chop the garlic. Quarter the peppers and cut crosswise into
strips, dice the tomatoes.
Heat 2 tbsp. oil in a pan. Fry the onions for approx. 5 minutes until
translucent, briefly add the garlic, stir in the peppers and fry for 2
minutes. Remove the pan from the heat and stir in the paprika powder,
mix in the tomatoes and season with salt. Cover, bring to the boil and
simmer for 10 minutes.
Heat 1 tbsp. of oil in a large pan, season the fish fillets on both
sides with salt and pepper. Fry for 3-5 minutes on both sides.
Chop the parsley leaves.
Serve the fish on the paprika vegetables and sprinkle with parsley. |
