Peel the garlic and crush a little with a knife. Wash
and deseed the peppers and cut into strips. Finely chop the herbs. Heat
2 tbsp. olive oil in a pan, sauté the peppers, garlic and 2/3 of the
herbs. Deglaze with white wine and simmer gently for approx. 8 minutes.
Remove the garlic and season the vegetables with salt and pepper. Season
the fish fillets all over with lemon juice and salt. Heat the remaining
oil in another pan and sear the fish over a high heat for 3 minutes on
each side. Arrange the parika vegetables and cod on plates, sprinkle
with the remaining herbs and serve.
Serve with toasted ciabatta. |
