Salmon on Mushrooms

500 g mushrooms
juice from 1 lemon
4 salmon cutlets
1 bunch dill
1 bay leaf
250 ml fish- or beef stock
125 ml white wine
1 small onion
2 tbsp. butter
salt, pepper, oil

 

 

Cut mushrooms into slices. Chop onion finely and sauteé them in oil for one minute. Add mushroom slices and simmer in a quick oven about 5 minutes. Douse with wine and add stock, bay leaf and some dill staks. Simmer all about 5 minutes.
Spice salmon with salt, pepper and lemon juice and place them upon the mushrooms. Let all simmer over low heat covered about 10 minutes.
Remove salmon and mushroom and keep warm. Remove bay leaf and dill. Mix well sauce with cold peaces of butter and season to taste with salt, pepper and lemon juice.
Fold in mushrooms.
