Salmon with Mustard Crackling

4 salmon filets
mustard
flour
oil
green salad
Marinade
1 shallot or 1/2 small onion
2 tbsp. vinegar
1 tsp. mustard
4 tbsp. olive oil
salt, pepper

 

 

For marinade chop shallot finely and mix well with the other ingredients.
Cover salmon filets on both sides with mustard, dredge them in flour and fry them.
Arrange onto green salad and sprinkle with mustard marinade.
