RÄUCHERFORELLE   mit  APFEL  DILL  SAUERRAHM 

Smoked Trout with Appel Dill Sour Cream

4 smoked trout filets
1 apple
2 gherkins
1 small onion
250 ml sour cream
1 tbsp. creme fraiche
1 tsp. mustard
juice from 1/2 lemon
salt, pepper
1 tbsp. dill (chopped)

 

 

Cut 2 filets into 1,5 cm stripes. Peel apple and remove core und cut into small cubes. Cut gherkins and peeled onion into thin slices.
Mix well sour cream and cream fraiche, spice with salt, pepper, mustard, lemon juice and dill. Add apple, gherkins, onion and trout stripes and blend all. Marinade for 1 hour in the refrigerator.
Season to taste and garnish with the rest of trout filets and dill.
