Defrost the seafood, wash and pat dry. Peel and finely
chop the garlic. Wash the spring onions and cut into 3 cm pieces. Wash
and peel the cucumber, halve lengthways, remove the seeds and cut into
slices. Wash the tomatoes, remove the stalks and roughly dice.Heat the
oil in a large pan and sauté the garlic. Add the seafood and fry for a
few minutes. Stir in the rice, tomatoes, cucumber and spring onions.
Stir-fry for a further 5 minutes. Flavour with salt, pepper and fish
sauce. Serve garnished with parsley. |
