THAI  BASIL  CHICKEN

Thai Basil chicken

5 cloves of garlic (finely chopped)
2-3 chilli peppers
4 shallots (or 1 large red onion)
chicken (chopped)
1 tbsp. sugar
2 tbsp. soy sauce
2 tbsp. fish sauce
3 tbsp. oyster sauce
Juice of 1/2 lemon
1 bunch basil
4 eggs
oil

 

Finely slice the chilli and shallots. Heat a wok or large pan, add plenty of oil and fry the garlic, shallots and chilli for approx. 1 minute. Add the chicken and fry vigorously until the meat is cooked. Stir in the sugar, soya sauce, oyster sauce, lemon juice and fish sauce. Cook for a few more minutes. Remove from the heat, fold in the basil leaves and stir. Fry the fried eggs.
Arrange the chicken on the rice and place 1 fried egg on top of each.
