Finely slice the chilli and shallots. Heat a wok or
large pan, add plenty of oil and fry the garlic, shallots and chilli for
approx. 1 minute. Add the chicken and fry vigorously until the meat is
cooked. Stir in the sugar, soya sauce, oyster sauce, lemon juice and
fish sauce. Cook for a few more minutes. Remove from the heat, fold in
the basil leaves and stir. Fry the fried eggs.
Arrange the chicken on the rice and place 1 fried egg on top of each. |
