Peel and roughly dice the potatoes. Wash the peppers and
cut into strips. Peel the onions and cut into wedges, slice the
kabanossi.
Fry the sausage slices in a little oil, turning until crispy. Remove and
set aside. Sauté the onion wedges and pepper strips in the frying fat.
Add the potato cubes and sauté. Season with salt and pepper and pour in
the soup.
Bring to the boil, cover and simmer for 20 minutes. Roughly chop the
sauerkraut and add to the stew with the sausage towards the end. Flavour
the soup with salt, pepper and paprika.
Garnish with crème fraiche and parsley. |
