Peel the potatoes and cut into 2-3 cm pieces. Wash and peel the greens
and also cut them into large pieces. Coarsely dice the onion. Heat the
oil in a large pot and sauté the onions. Add the potatoes and soup
vegetables and pour in 1 litre of water, bring to the boil, add the
stock cube and simmer, covered, for about 20 minutes. Slice the
cabanossi, add to the stew with the sausages and simmer for another 5
minutes.
Season well with salt, pepper and nutmeg. Serve the stew and sprinkle
with pepper and parsley. |
