Wash pumpkins, remove caps and seeds. Mix beef stock
with couscous. Dice red pepper and grate courgette. Cut onion and garlic
into fine cubes.
Preheat overn to 180° C.
Mix well couscous, mincedmeat, vegetable, eggs, onions and garlic with
paprika powder, cumin and salt. Stuff pumkins with this mixture and
place them in a gratin dish. Bake in oven about 1,5 hours. Allow to rest
before carve. |
