GEFÜLLTER  KÜRBIS

Stuffed Pumpkin

2 pumpkins (hokkaido)
100 ml couscous
100 ml beef stock
1 red pepper
1 small courgette (zucchini)
1 red onion
4 cloves of garlic
500 g mincemeat
2 eggs
3 tsp. cumin
1 tbsp. paprika powder (hot)

 

 

Wash pumpkins, remove caps and seeds. Mix beef stock with couscous. Dice red pepper and grate courgette. Cut onion and garlic into fine cubes.
Preheat overn to 180° C.
Mix well couscous, mincedmeat, vegetable, eggs, onions and garlic with paprika powder, cumin and salt. Stuff pumkins with this mixture and place them in a gratin dish. Bake in oven about 1,5 hours. Allow to rest before carve.
