Pumpkin Scrambled Eggs

Ingredients for 2 people

250 g pumpkin
4 eggs
1 clove of garlic
100 g bacon
1 small. onion
salt, pepper, oil
fresh herbs

 

 

Cut the bacon into strips and peeled pumpkin into thin strips. Chop onion and garlic finley.
Heat oil in a pan, sauté garlic and onion, add bacon and fry briefly. Add pumpkin strips and fry them until al dente.
Whisk the eggs and pour into the pan. Season with salt and pepper. Fry all well and stir it frequently.
Before serving sprinkle with freshly chopped herbs.
