Pumpkin Loafs

200 g potatoes
300 g pumpkin flesh
2 eggs
80 g flour
150 g smoked salmon
4 tbsp. sour cream
1 onion
salt, pepper, nutmeg, oil

 

 

Grate the peeled potatoes and pumpkin finely. Mix well eggs with flour. Mix egg mixture with grated potatoes and pumpkin and season with salt, pepper and nutmeg.
Form 8 small loafs and fry them slowly in a nonstick pan on both sides.
Place them on preheated plates and cover with smoked salmon slices.
Garnish with sour cream and onion rings.
