Asparagus with Fried Eggs and Bacon

2 bunches of green asparagus (á 500g)
2 red onions
200 g bacon (sliced)
8 eggs
oil, sal, pepper, chives
 

 

 

Boil asparagus al dente.
Peel the onion and cut into thin rings. Fry bacon in a pan, add onion and fry all until the bacon is crispy. Remove and keep warm. Fry eggs in the pan.
Arrange asparagus with bacon and onions on warmed plates. Place 2 eggs per portion, season with salt and pepper and garnish with chives.

 

         Side dish:  white bread
