TOMATO   TONNATO   

Tomato Tonnato

8 small tomatoes
1 tbsp. capers
1 can of tuna (150 g)
125 g creme fraiche
Juice of ½ lemon
salt, pepper
16 basil leaves
8 caper berries

 

 

Cut away the caps from tomatoes and hollow out. Drip them off onto paper towels.
Pat capers dry and chop finely. Drain the tuna, pick to pieces in a bowl and mix well with capers, creme fraiche, salt, pepper and lemon juice.
Fill mixture into the tomatoes and garnish with basil leaves and capers.
