Cut the feta into small cubes and finely chop the garlic.
Quarter the onion and then slice it. Dice the zucchini. Heat 2
tablespoons of oil in a large pan and add the minced meat, garlic, onion,
salt, pepper, paprika powder and oregano. Fry the minced meat until
crumbly. In another pan, heat 2 tbsp. of olive oil and fry the courgette
pieces for about 5 minutes. Add salt, cherry tomatoes and fry for
another 5 minutes. Add the vegetables to the minced meat. Add the
chopped tomatoes and cook for another 5 minutes until the courgettes are
al dente. Fold in the feta cubes and serve. |
