Scrambled Eggs in Peppers

3 medium peppers (approx. 10 cm high)
6 eggs
200 g cheddar (grated)
2 tbsp. parsley (chopped)
salt, pepper
 

 

 

Cut off the ‘lids’ of the peppers, remove the seeds and white skin. Crack 2 eggs into each pepper and season with salt, pepper and parsley.
Beat the eggs with a fork and sprinkle with cheese. Place the ‘lids’ on the peppers. Place the peppers on the grill. Grill at 180°C for approx. 20 to 25 minutes until the eggs are set.
