MACCARONI  mit  ZUCCHINISAUCE

Macaroni with Zucchini Sauce

150 g raw ham (thinly cut)
400 g of zucchini
1 yellow pepper
1 onion
3 cloves of garlic
3 tbsp. olive oil
250 ml vegetable soup
125 ml whipping cream
125 ml sour cream
150 g creme fraiche
salt, pepper, sugar

 

 

Reserve 4 ham slices for the garnish, cut the rest into strips.
Wash zucchini and grate. Cut the pepper into strips. Peel onion and garlic and chop finley. In a coated pan, sauté the onion, garlic and paprika in a little oil. Add zucchini and ham and simmer for 10 minutes. Add soup and cream, stir in sour cream and crème fraîche, bring the sauce to a boil and simmer over low heat while stirring for about 10 minutes. Season the sauce with salt and pepper and a pinch of sugar.
At the same time cook the macaroni in salted water until firm, strain and drain. Roast reserved raw ham crispy. Mix the macaroni with the sauce and serve garnished with the raw ham.
