Peel and finely chop the onion and garlic. Dice
the peppers and courgettes. Heat the oil in a pan and fry the mince. Add
the onion, garlic and diced vegetables and sauté. Stir in the tomato
purée. Add the pasta, soup and thyme, season with salt and simmer until
the vegetables are al dente. Cut the feta into cubes. Season to taste
with salt and pepper and serve garnished with the feta. |
