Potato Salad with Salmon

750 g potatoes
125 ml beef stock (cube)
1 tbsp. vinegar
2 tbsp. oil
1 tsp. mustard
60 g rocket salad
200 g smoked salmon
salt, pepper

 

 

Boil potatoes and leave to cool down. Mix a marinade with beef stock, vinegar, oil and mustard. Season to taste with salt and pepper. Peel potatoes, cut into slices and marinade them for about 15 minutes, stir from time to time. Cut salmon into stripes. Combine salmon, salad and potatoe salad.
